Composed entirely of our 50-year-old Merlot vines and among the first to be harvested in the valley, the Estate Vineyard was hand-picked and carefully sorted in the cooler evening hours to encourage the fruit to stay intact through harvest and the Brix to remain low. This Merlot went through a 14 day fermentation period followed by 24 months in Neutral French Oak, creating a medium-bodied wine that exhibits notes of red fruit, dried strawberry, clove, and licorice. - [Sauvignon Blanc](https://matindubois.com/product/sauvignon-blanc/) - Sauvignon is believed to be derived from the French word "sauvage" meaning wild, making this Sauvignon Blanc our wild white. Adequate rainfall and ideal conditions allowed us to dry farm 90% of the vineyard and perform minimum intervention practices. Our sauvignon blanc was fermented for 14 days in cool stainless steel to protect and preserve the delicate flavors of the juice while developing notes of tropical fruit, flint, and jasmine in the wine. The minerality, citrus, and refreshing acidity in this wine makes it a perfect pair for white fish, oysters, and spring picnics. - [2017 Cabernet Franc](https://matindubois.com/product/2017-cabernetfranc/) - A tribute to two of our favorite red grapes, this Cabernet Franc and Merlot blend brings up memories of some of the first wine blends we fell in love with. This Bordeaux-inspired wine is composed of 90% Temecula Valley Cabernet Franc and 10% Estate Grown Merlot to create a perfect California representation of one of our cherished wine blends from across the pond. The mighty frog emblem was inspired by the frogs and toads that inhabit the creek below our vineyard and serenade us in song as they roam the vines under the moonlight. The frog is also emblematic of the earthy tones found in the Cab Franc and the unique terroir that supports our Merlot vineyard. From the marriage of these two Right Bank grapes, this 2017 Cabernet Franc delivers notes of bell pepper, herbs, and rich terroir to the middle palate while the Merlot brings balance and rounds out the finish with red fruits and soft tannins. The result is a complex and medium-bodied wine with a peppery earthiness that reminds you of fresh rain in the garden. - [2012 Lavande](https://matindubois.com/product/2012-lavande/) - Named after the flourishing lavender fields that grow next to our vineyard, Lavande is a product entirely composed of our 45-year-old vines, Lavande is an accessible wine designed to exemplify the full fruit potential of our Merlot grapes. The Lavande went through a 14-day fermentation period followed by 22 months in neutral French Oak, allowing for the full expression of dried fruit characteristics including plums, black cherries, and pomegranates to come through. The slightly acidic nature of the grapes is perfectly balanced with 2% residual sugar allowing all the fruit to come forward on the palate. Served slightly chilled, Lavande is a wonderful pairing with soft cheese, chocolates, and a warm summer’s day. - [NV Solidago](https://matindubois.com/product/nv-solidago/) - "Solidago" is the Italian term for "goldenrod", an herb that is plentiful near our vineyard. As one of our only Italian style blends, Solidago is our take on a Super Tuscan style blend. Composed of 50% Sangiovese, 25% Cabernet Sauvignon and 25% Merlot, this wine is as complex and exciting in flavor as its historical origins in Tuscany. This Northern Italian-style blend exhibits hints of tart, red fruit, and high acidity that is characteristic of the Sangiovese base. Layers of Merlot and Cabernet Sauvignon bring out notes of black plum and round out the green peppercorn finish. We enjoy this as a perfect accompaniment to acidic foods and spicy tomato based sauces. - [2020 Borel](https://matindubois.com/product/2020-borel/) - Composed of 50% Estate grown Merlot, 30% Temecula Valley Cabernet Sauvignon, and 20% Temecula Valley Cabernet Franc, this classic red blend was named after Leon Borel. The increase of morning fog throughout the summer kept the vines a couple of weeks behind normal, but the late summer heat rewarded us with excellent tannin development. Harvest commenced in late September – still significantly earlier than the vast majority of the rest of the valley. The Luiseño Estate Vineyard, as always, was hand-picked and carefully sorted in the cooler evening hours to encourage the fruit to stay intact through harvest. The skins remained in contact with the skins for an average of 17 days to extract optimum color, tannin, and structure. This classic style blend of Merlot, Cabernet Sauvignon, and Cabernet Franc features upfront flavors of ripe cherries, blackberries, and chocolate. Extensive barrel aging resulted in multiple layers of oak on the palate, soft tannins, and a long, supple finish. - [2020 Corbeaux](https://matindubois.com/product/2020-corbeaux/) - This Old World style Merlot was named Corbeaux, French for crow or raven, in tribute to the crows that continuously populate our vineyard. This Bordeaux-inspired wine is a beautiful and complex red composed of 89% Estate Grown Merlot, 8% Temecula Valley Cabernet Franc, and 3% Temecula Valley Syrah. Among the first to be harvested in the valley, the Luiseño Estate Vineyard was hand-picked and carefully sorted in the cooler evening hours to encourage the fruit to stay intact through harvest and the Brix to remain low. The skins remained in contact with the skins for 17 days to extract optimum color, tannin, and structure. Select oak aging resulted in restrained barrel impact that defined and lengthened the fruit on the palate. This maceration period allows the wine to develop deep and more complex flavors, higher tannins, and a beautiful copper color - creating the perfect blend between a light white wine and a flavor-enhanced red wine. The word “Ramato” means copper or auburn in Italian, a tribute to the orange-pink hue that develops through the Pinot Grigio grapes' extended stay on the vine and weeks-long maceration period.
